Italian Chicken Lettuce Wraps and Cucumber Tomato Salad

Quick! Hurry! Before the summer veggies go away for many long months, make these Italian Chicken Lettuce Wraps that I made up, and serve them with this yummy Cucumber Tomato Salad! Hurry, I tell you! :) :)
This was one of my favorite recipes that I created over the summer for our weekly Meal Plans. I hope you enjoy it as much as we did!

Italian Chicken Lettuce Wraps

INGREDIENTS

2 lbs ground chicken

2 small onions, chopped fine

4 garlic cloves, minced

1 medium yellow squash, diced

1 bell pepper, diced

1 small bunch basil, chopped

salt & pepper

1 recipe Honey Italian Dressing

1 head romaine lettuce

 

METHOD

Cook the ground chicken with the onions, garlic, squash, pepper and basil. Sprinkle salt and pepper on the mixture and toss.

Wash the lettuce and rip into big leaves, set aside on paper towels to dry. Serve the meat mixture on large lettuce leaves with Honey Italian Dressing drizzled on top.

 

Honey Italian Dressing

INGREDIENTS

1/4 c red wine vinegar

1/2 c extra virgin olive oil

2 TB lemon juice

2 TB honey

METHOD

Whisk everything together and drizzle on salad or lettuce wraps.

Cucumber Tomato Salad

INGREDIENTS

2 c cherry or grape tomatoes

(different colors and types are

best!)

1 large cucumber

salt

1 bunch basil, torn

1 recipe Honey Italian Dressing

 

METHOD

Wash the tomatoes in half and set inside of a colander. Wash the cucumbers and dice and add to the colander. Sprinkle salt over the tomatoes & cucumber and toss. Set aside for 15 minutes to drain.

In a medium bowl, combine the cucumber/tomato mixture with the basil. Drizzle some Honey Italian Dressing over the salad and toss to combine. Serve!

    yumm! i am definitely going to make this.. do you use the yellow squash that looks like zucinni? I rarely ever make recipes i see because i cannot eat them..but this one is different and i sounds AMAZING! even though my whole family is not doing GAPS i will make it and i am sure they will love it! :) thanks so much!
