Sautéed Cauliflower with Cheese

Cooked cauliflower is the perfect side dish this time of year. With cheese, it’s a totally satisfying comfort food & a perfect replacement for potatoes if you’re on GAPS.

Sautéed Cauliflower with Cheese

Ingredients

  • 2 TB coconut oil
  • 1 onion, sliced thin
  • 1 bag frozen bell peppers, thinly sliced
  • 1 head cauliflower, chopped
  • 8 oz white cheddar cheese, shredded

Method

  1. Heat coconut oil in a skillet over medium heat.
  2. Cook the onions, peppers and cauliflower until tender.
  3. Top with the cheese and broil, 3” from the heat, for about 2 minutes, or until the cheese is melted and bubbly.

    Brenda, this was super yummy! I cooked some chopped bacon and then added the onion and cauliflower. I didn’t have any peppers but it sure was delicious anyway! Thanks for sharing!

    This was absolutely delicious! Non-gaps members of our family said it was better than mac & cheese…yum! I did leave out the onions and peppers and had to add some water about halfway to get the cauli soft…but cooked the water off before adding the cheese and putting under the broiler.
