    Grain-Free Spicy Whole Roasted Chicken

One of the things I learned on the farm, raising our own chickens, was that farm chicken isn’t easily served up as boneless skinless chicken breasts or thighs. Most of the time, our home-grown chicken was served as whole, roasted chicken. This brought about the need to create different and interesting whole chicken recipes! 🙂 This was one of the recipes I created on the farm. This recipe can also be found in my GAPS Meal Plans. This chicken makes an excellent broth! I used it to make my Tomato Soup recipe & it made a tasty soup! Grain-Free Spicy Whole Roasted Chicken Author: Brenda Scott Serves: 4-8 Ingredients 1…

    Grain-Free Carrot Raisin Salad

We’ve been making this salad since we were on the GAPS Diet (which we started approximately 10 years ago & were on for 3 years!). My kids love this salad. It is a nice dinner addition and quite easy to prepare. This recipe is in my GAPS Meal Plans. Grain-Free Carrot Raisin Salad Author: Brenda Scott Serves: 6 Ingredients 1 lb carrots, shredded 2/3 cup raisins, no sugar added 1 cup plain yogurt (homemade is best, use coconut milk yogurt for a dairy free version) 3 TB honey 1/2 tsp cinnamon, optional Instructions Combine yogurt, honey and cinnamon in a medium bowl. Shred carrots in a food processor or with…

    Paleo Chicken Curry Salad (Dairy-Free, Gluten-Free, Nut-Free)

I made up this Curry Chicken Salad and served it at a Norwex party at my house last week. I’ll blog more about Norwex later, my friend Erin is selling it here if you want to check them out before I get a chance to blog about them. I don’t typically like microfiber because of the feeling/texture, but I am super impressed by Norwex! (I do not make money off of the link to Erin’s Norwex shop, but she does if you buy something, which I think is fabulous, because she’s a stay at home mommy of a busy 2 year old and a real foodie!). ANYWAYS, back to the curry! I made this up,…

How to order a Paleo Chipotle Salad

My family really likes Chipotle. It’s our “fast food” go to–but admittedly, it’s a bit pricy for a family of 6. I am not complaining though, because I would rather pay for good quality ingredients and know that we are fueling the bodies of our family members WELL. Food is one area of life where I don’t recommend skimping. Go without a data plan, text messaging, internet, cable TV, a cell phone, air conditioning, $4 coffees, video services like Netflix, etc.–before you cut back on your food budget. I am not saying that you need to spend your food money on dining out at Chipotle. I’m just saying, in general,…

How to defend your diet at the holidays

photo credit: AJ Schuster The holidays are coming up. For some of you, because you’re choosing to eat “differently” than the rest of your family, the holidays are something you dread. You’re going to be questioned, scolded, and possibly downright persecuted for taking a stand for your health. I write this post because I’ve been there–I’ve experienced the attacks–and I have recently learned things that I wish I knew back then. See, I’ve been taking logic lessons. Ok, that’s not really true–I’m teaching my kids logic, during homeschool. I think I might just love this book, The Fallacy Detective, more than my kids. Through this book, I’ve learned how…

    Where to Find Coconut Flour

{photo credit: Egahen} Since we’re on GAPS and we also have nut allergies in our home, we use a lot of coconut flour. Some of our favorite coconut flour recipes include Coconut Flour Snickerdoodles Fudgy Coconut Flour Brownies Coconut Flour “Corn Bread” Coconut Flour Pumpkin Muffins   What are the benefits of using coconut flour? A little bit of coconut flour goes a long way! You will use 1/2 cup or so in a recipe that will make 12 muffins, so a pound of coconut flour will last you a while. It is high in protein. It does not contain any grains or nuts. It has a naturally “sweet” flavor to…
