Grain-Free Spicy Whole Roasted Chicken
One of the things I learned on the farm, raising our own chickens, was that farm chicken isn’t easily served up as boneless skinless chicken breasts or thighs. Most of the time, our home-grown chicken was served as whole, roasted chicken. This brought about the need to create different and interesting whole chicken recipes! 🙂 This was one of the recipes I created on the farm. This recipe can also be found in my GAPS Meal Plans. This chicken makes an excellent broth! I used it to make my Tomato Soup recipe & it made a tasty soup! Grain-Free Spicy Whole Roasted Chicken Author: Brenda Scott Serves: 4-8 Ingredients 1…

Grain-Free Carrot Raisin Salad
We’ve been making this salad since we were on the GAPS Diet (which we started approximately 10 years ago & were on for 3 years!). My kids love this salad. It is a nice dinner addition and quite easy to prepare. This recipe is in my GAPS Meal Plans. Grain-Free Carrot Raisin Salad Author: Brenda Scott Serves: 6 Ingredients 1 lb carrots, shredded 2/3 cup raisins, no sugar added 1 cup plain yogurt (homemade is best, use coconut milk yogurt for a dairy free version) 3 TB honey 1/2 tsp cinnamon, optional Instructions Combine yogurt, honey and cinnamon in a medium bowl. Shred carrots in a food processor or with…

Grain-Free Tomato Soup
This soup is from my GAPS Meal Plans & we enjoyed it again for lunch last week! This is really quite simple to prepare, and it is suitable for people who are eating GAPS, Paleo, Primal, Gluten-Free, Dairy-Free, and even vegetarian or vegan. My family serves this alongside gluten free grilled cheese sandwiches. There is a grain-free grilled cheese sandwich recipe in my meal plans, but you can use any kind of “bread” that works for your diet restrictions. Make sure to use tomatoes that are stored in a jar, not canned tomatoes. Tomatoes are acidic and therefore leech toxins out of metal cans lined with BPA. I prefer Jovial…

Homemade Paleo/GAPS Mayonnaise
Recently I shared my Chicken Curry Salad recipe, and I promised that I would also share my homemade mayonnaise recipe. Why should commercial mayonnaise be avoided? Mayonnaise at the grocery store is usually filled with unhealthy oils like soy. Soybean oil is associated with weight gain, diabetes, glucose intolerance, insulin resistance, fatty liver, and more. (source). Don’t be afraid of the healthy fats in this mayonnaise! I’m currently reading The Big Fat Surprise, and I want you all to be aware that the fear of fat that we have in the United States is SO off base and not truly scientifically proven. Eat good fat, in good conscience, for good health! This…

Paleo Chicken Curry Salad (Dairy-Free, Gluten-Free, Nut-Free)
I made up this Curry Chicken Salad and served it at a Norwex party at my house last week. I’ll blog more about Norwex later, my friend Erin is selling it here if you want to check them out before I get a chance to blog about them. I don’t typically like microfiber because of the feeling/texture, but I am super impressed by Norwex! (I do not make money off of the link to Erin’s Norwex shop, but she does if you buy something, which I think is fabulous, because she’s a stay at home mommy of a busy 2 year old and a real foodie!). ANYWAYS, back to the curry! I made this up,…

New Improved Extra Chocolatey Chocolate Coconut Flour Cupcakes (Paleo Style)
I wrote my original Extra Chocolatey Chocolate Coconut Flour Cupcakes recipe 6 years ago! Can you believe it!? My family had 3 successful years on the GAPS Diet. Then we went through some big life changes (like saying goodbye to our beloved foster kids of 14 months, etc.) and I dropped the ball on GAPS. It’s hard to go back to avoiding grains, sugar, and making everything from scratch. I’ve gone back to it for short stretches. I know it is a healthy way to eat, and also, I know how hard it is. I’m back to grain free, no sugar, and making everything from scratch, because I finally got desperate enough.…

Maple Syrup Coconut Milk Mocha Recipe –Paleo!
I haven’t always been a coffee drinker. You can blame my husband. Yup, it’s all his fault. 😉 I was the tea drinker, and he was the coffee drinker, and he kept begging me to come to the dark side and join him. Anyone else have the same kind of situation going on? And once you’re on the dark side, it’s hard to leave it, isn’t it Anakin? Oh, I mean–sorry, we’re not talking about Star Wars here. 😉 These days, I’ve been eating pretty much grain-free, dairy-free, and sugar only on rare occasions. One day I decided to make up a mocha that wouldn’t be “cheating.” I’ve been drinking it…

Nut-Free Paleo Chicken Satay with Sunflower Butter Dipping Sauce Recipe
I have not eaten peanuts in over 14 years, because I had (scary) negative reactions to them. We also have a daughter who has an anaphylactic allergy to peanuts. Needless to say, we haven’t ventured into any Thai restaurants. 😉 So many people seem to love Thai food, so I’ve been curious about it! I wished SO bad I could try it, but wasn’t willing to risk peanut (or wheat) contamination. The best way to get around an obstacle like this is to just do it myself! That is how this recipe came to be–and OH MY GOODNESS it is yummy!!! If you can have regular peanut butter, you can…

Gluten-Free & Vegan Chocolate Cupcakes
Don’t freak out, I’m not going vegan. I believe in eating MEAT! I made this up for my daughter and myself (and the rest of the family enjoyed them as well). The reason I made us a dairy-free, egg-free cupcake was because both of us had a blood draw that showed high levels of antibodies to both eggs and dairy in our system. Boo. I know that Dr. Natasha says that sensitivity testing like this fluctuates, depending on what the patient ate that month, and what the patient really needs is GAPS. I believe in GAPS, but I’m questioning Dr. Natasha’s thoughts on sensitivity testing. See, my test also showed…

GAPS Intro Recipe: Lemon Basil Chicken
My family did the GAPS Intro again just after Christmas. It’s a good thing to do every now and then to re-set and cleanse the body–especially after a holiday season with cakes, and pies, and dinner rolls and candy! If you don’t know about GAPS, you’ll want to check out the book: Gut and Psychology Syndrome by Dr. Natasha Campbell-McBride. I get a little bored of the GAPS Intro recipes that are out there. I feel like they’re lacking flavor, and when I don’t have enough good flavor to satisfy me, I feel like I need to eat something else that is off the diet. I enjoy trying to make…
