Ruby’s “Good, Homemade Fruit Dessert”
Ruby is almost 7, and enjoys doing all things “Mommy.” She loves taking care of baby dolls, pretending our dog is a baby, putting away groceries, organizing, and of course, helping out in the kitchen! Coconut Flour Carrot Zucchini Muffins
It won’t be long until we will have zucchini from our garden…I thought I’d share this yummy recipe that uses both carrots and zucchini. YUM! Have it for breakfast or alongside a soup or salad, or even as a dessert! Salted Rosemary Side Pork
This is side pork. It looks like bacon, but a little fattier. We had our 3 American Guinea Hogs slaughtered a couple of weeks ago, and asked for nitrate free pork products. This was our first time going to this particular butcher shop, we’ve always gone somewhere else where they did a “salt cure” for us instead of a sugar & nitrate cure. We got our meat seller’s license and plan to sell our pork at farmer’s market this summer (YAY!), so we needed to go to an FDA inspected facility. This syrup is very tasty and is perfect on these Coconut Flour Pumpkin Pancakes. When you’re eating grain free, you have to get creative when it comes to lunches. My kids can eat a lot, so I’m also always looking for frugal lunch ideas. Our family loves acorn squash with butter and a little bit of honey in it. One day, I came up with this idea for lunch! It is frugal, too! Each squash costs me about $1.50 to $2.25. The apples cost a little less than $1 for the whole recipe. The shallots are cheap–maybe .25 to .50. The butter is about .75 total.
