This is my family’s new favorite muffin recipe! Enjoy! Coconut Flour Carrot Muffins INGREDIENTS 6 eggs 1/2 c coconut oil, melted 1/2 c honey 2 TB vanilla 1/2 tsp sea salt 1/2 tsp baking soda 2 tsp cinnamon 1/2 c coconut flour 2 c carrots, shredded 1/2 c raisins or dried cranberries, optional METHOD Preheat the oven to 350 degrees. This is another area where my taste buds have grown up: cantaloupe. I never liked it, ever. I can tolerate it now, and even enjoy it in a smoothie like this! Simple & refreshing, and a great addition to breakfast–or perfect for an afternoon thirst quencher/energy booster after being in the sun! Our New Favorite Treat – Yummy Orange Yogurt Recipe
When I was a kid, I LOVED Yoplait Mandarin Orange Yogurt. Often, they would come out with peach yogurt and they’d stop carrying my favorite orange kind (though it was tricky, the peach kind LOOKED like the orange kind). I was sad. I liked the orange kind. Taco/Pizza Eggs
This is a fast and easy dinner/breakfast that I made up and we ate this evening. It’s a way to make eggs go further when you don’t have enough to feed your family. My family (of 6) can easily eat 15 eggs. Yes, we’re big egg eaters. Our chickens are only producing about 9 eggs per day, so we have to get creative sometimes! Tonight I made us this simple dinner, with only 6 eggs. GAPS legal Coconut Flour Blueberry Muffins!
I made a mistake this morning. We were going to a class where the 2 of the kids would see their birthmom, and I got them all dressed up nice and pretty, and then I fed them blueberry muffins. NOT SMART! :) My suggestion? Make these muffins and serve them to your kids while they're still in their pajamas. Quiche Night!
I love quiche. I know, we eat eggs for breakfast, don't I get tired of this many eggs? Well, no. :) Quiche is more about the other ingredients, and less about the eggs for me. It's all good together though. It's a great way to use up leftover meat and veggies. Besides, we have a lot of eggs popping out of our beautiful free-ranging chickens these days! (Serioulsy, we have like 5 dozen extra per week--anyone who lives near us want to come buy some? :))

Staple Meals: Breakfasts
Since we have 8 kiddos in our home and lots of appointments and life is REALLY busy, I haven't been coming up with lots of brand new recipes. Instead, I stick to my staples. I'm not going to type up full recipes here, but I want to give you an idea of what we eat around here. :)

Cranberry Apple Grain Free Granola
Every Wednesday before homeschool co-op, we have a big breakfast (the kids have a snack-time there, but I want to make sure they're well-fed because they can't just munch whenever they're hungry. Before I get in the shower, I pop 2 boxes of Applegate Farms chicken & apple sausages in the oven (YUM. I could eat an entire box of these alone). Lately, I've also been mixing up 8 eggs with a little yogurt, cheese & spices and pouring them in a buttered 8x8 pan, and putting those in the oven too.
