    Homemade Paleo/GAPS Mayonnaise

Recently I shared my Chicken Curry Salad recipe, and I promised that I would also share my homemade mayonnaise recipe. Why should commercial mayonnaise be avoided? Mayonnaise at the grocery store is usually filled with unhealthy oils like soy. Soybean oil is associated with weight gain, diabetes, glucose intolerance, insulin resistance, fatty liver, and more. (source). Don’t be afraid of the healthy fats in this mayonnaise! I’m currently reading The Big Fat Surprise, and I want you all to be aware that the fear of fat that we have in the United States is SO off base and not truly scientifically proven. Eat good fat, in good conscience, for good health! This…

    No Sugar Jams and Jellies

Image Credit It is SUMMER TIME! It’s time to pick berries, freeze them, make fresh goodies out of them, and CAN THEM! I LOVE homemade jam, but I do not like cooking with sugar. I did a little research for some no-sugar jams and jellies and wanted to share the awesome recipes I found! To make many of these recipes, you’ll need Pomona’s Universal Pectin, because you can use this type of pectin with honey instead of sugar. I am so thankful for this option. We don’t need more sugar, and fruit is so sweet on it’s own, anyways! The equipment you will need for making jam simply includes a water bath…

    Homemade Tzatziki Sauce

If you like Greek food, you’ll recognize this sauce! It’s great on meats, with veggies, and of course, with Greek fries. If you’re not crazy about garlic, you can cut back the number of garlic cloves. I always add way more garlic than I probably should. 😉 PrintHomemade Tzatziki Sauce Ingredients1/2 cup strained yogurt (homemade yogurt, set over cheesecloth and let the whey drip out) 1/2 cup sour cream (homemade) 1 cucumber, diced 1 TB olive oil 2 TB lemon juice 3 cloves garlic, peeled 1/2 tsp dried dill salt and pepper to tasteMethodCombine everything in a food processor or blender. Pour into a bowl and chill for at least…

    Winter Guacamole Recipe

Ok, so it’s not quite winter yet, but it feels like it, right? At least in northern Oregon it does! The mornings are frosty and oh-so-cold, and there have been several days where it was crazy windy outside. Whatever the weather is, here’s the dilema: avocados are in season and readily available in stores, but tomatoes and cilantro (the other great guacamole pieces) are not. What do you do if you want to make a really good guacamole this time of year? My guacamole cravings lead me to invent this simple recipe. I mentioned on Facebook that before GAPS (almost 2 years ago), I couldn’t eat avocados. The effect on…

    Salt & Pepper Mixture

I was saving sugar in this container for over a year, "just in case" people came to my house and wanted sugar in their tea or coffee. I think we may have used it once during that time, most people are fine with honey. I decided that we didn’t need to keep the sugar anymore, so I dumped it out, washed (and dried!) the jar, and came up with a new usage for it: Salt & Pepper mixed together! I love having salt & pepper mixed, right by my stove, because it is so easy to add to foods while I am cooking. And it’s easy-cheesy to prepare.…
