Gluten-Free & Vegan Chocolate Cupcakes
Don’t freak out, I’m not going vegan. I believe in eating MEAT! I made this up for my daughter and myself (and the rest of the family enjoyed them as well). The reason I made us a dairy-free, egg-free cupcake was because both of us had a blood draw that showed high levels of antibodies to both eggs and dairy in our system. Boo. I know that Dr. Natasha says that sensitivity testing like this fluctuates, depending on what the patient ate that month, and what the patient really needs is GAPS. I’m *trying* to eat mostly grain-free again–with a few cheats here and there. I’ve been chatting about it over at my GAPS Facebook group. Come check it out and join the conversation. Ruby’s “Good, Homemade Fruit Dessert”
Ruby is almost 7, and enjoys doing all things “Mommy.” She loves taking care of baby dolls, pretending our dog is a baby, putting away groceries, organizing, and of course, helping out in the kitchen! When I was little, my favorite type of dessert to have for my birthday was Cherry Chip, cupcakes with pink frosting, of course! Raspberry Coconut Milk Gelatin Dessert {GAPS Friendly}
I got this idea from Cara’s Chocolate Gelatin “Pudding”. I love Cara’s recipes because they’re simple. She makes it easy for people to eat GAPS. It does not have to be super difficult, people! If you’re feeling overwhelmed by GAPS and you need help, I highly recommend Cara’s Intro Book and her Meal Plans. I wanted to make something pink for Valentine’s Day, so I played with her recipe and added frozen raspberries instead of chocolate.
