Red, White & Blueberry Coconut Flour Shortcake
This week my husband gets lots of goodies like this, because it’s his Birthday week and Fathers’ Day week! Lucky guy! On Sunday, I made this treat for him and he loved it. It was so amazingly good that I thought I’d share it with you! Make sure to brown the butter (I think it adds a dimension of flavor) and yes, use 2 TABLESPOONS of vanilla! YUM! You might want to make this on the 4th of July. Or every day until then and every day after that until the berries are out of season! 🙂 SHORTCAKE: 6 eggs 1/2 cup butter or ghee, melted and browned 1/2 cup honey…

GAPS Blueberry Banana Coffee Cake
We have a ton of blueberries in our freezer, and I’ve been trying to think of ways to use them (summer is coming faster than we think, and my kids and I love blueberry picking in the summer!). The Farmer worked from home today (I love those days!) and I wanted to make a better-than-average breakfast, so I made this up and served it along side some eggs. I hope you enjoy this! We thought it was super yummy! Is Chocolate GAPS Legal?
{photo credit: oskay} I make my obsession over chocolate no secret on this site. I LOVE chocolate. It was one of the biggest “issues” I had with starting GAPS–how could I live without chocolate? Pre-GAPS, I always had a stash of Cadbury Mini Eggs. Yes. I would bulk-buy at Easter. I know they make them at Christmas time, too, but for some reason I though that the pastel colored ones must be healthier than the bright red and green ones. To think that any of those things would be healthy in the slightest…well that is another story! We were on GAPS for at least 6 months when I read this:…

Honey Vanilla Bean Custard Ice Cream
{photo credit} I do not have a photo of the ice cream, just a simple vanilla bean. This means that the multiple times we have made this recipe, either: We liked it so much that we gobbled it all up before we could take a picture It melted and would not have made a very nice picture. The camera needed charging. My SD card was too full from all of the other yummy recipes I take pictures of. The electricity was out and we were eating our ice cream (before it melted in the chest freezer) by candle light (which wouldn’t make for very good photo lighting). Take your pick.…

Coconut Flour Pumpkin Cake with Cream Cheese Frosting
Back in December (yes, way back then! It seems so long ago, doesn’t it? :)), Farm Boy 2 had a Birthday. He turned 9 years old. Every other year, we let our kids have a “kid party,” meaning, that they get to invite a bunch of friends over, play silly games, create a theme, etc. For the last year, Farm Boy 2 has been dreaming up his theme–maybe a jungle party where all of the kids wear face paint? Maybe Star Wars? He was coming up with new ideas all the time. When it finally came down to planning his party, he wanted it simple. He ended up inviting over…

Chocolate Covered Caramel Dates
I was thinking that I needed to come up with a treat for Valentine’s Day, and then this one came to me. As a chocolate lover, I will tell you, this is the BEST recipe I have ever invented. It is SIMPLE and yet has a complex, chewy, sweet, salty, wonderfulness to it! I had a girls’ night with my friends Tarena and Rhonda last night, and we sat around munching and chatting the whole night. We had plantain chips with guacamole, some fruit, apples, plain dates, a young coconut and these little goodies. It was an awesome time and we had awesome food! 🙂 This is a photo…

Don’t forget about the Super Sale that is going on until Friday! You don’t want to miss out on these amazing deals! 🙂 Have you ever had gingerbread from a boxed mix? It was a staple dessert in our home when I was growing up. Do you know what is in the boxed gingerbread mix? Winning Fudge Recipe #1: Snowflake Peppermint Fudge
Warning: if you’re on GAPS, don’t eat the candy canes. 🙂 They’re not real food, they’re just to make the picture look pretty. It’s like putting a candle on a cake–you don’t eat the candle, right? They’re just a decoration. 😉 There were 2 entries in the Healthiest Fudge on the Planet contest, both by the same person, Caroline Lunger. She did an awesome job making up TWO great recipes! This one is super yummy. Stay tuned for the 2nd recipe though, it’s my favorite. Mmmm… Snowflake Peppermint Fudge PART 1 2 squares of bakers unsweetened chocolate 3 TBS creamed coconut 4-5 TBS honey (more if you like sweeter) 1/4…

Acorn Squash with Apples
When you’re eating grain free, you have to get creative when it comes to lunches. My kids can eat a lot, so I’m also always looking for frugal lunch ideas. Our family loves acorn squash with butter and a little bit of honey in it. One day, I came up with this idea for lunch! It is frugal, too! Each squash costs me about $1.50 to $2.25. The apples cost a little less than $1 for the whole recipe. The shallots are cheap–maybe .25 to .50. The butter is about .75 total. It ends up costing between $6.50 and $8 to feed 6 people ($1.08 to $1.33 each). Or, if…

Coconut Flour Snickerdoodles
I promised that I would share some Christmas cookies, so here you go! Don’t forget to participate in The Healthiest Fudge on the Planet Contest! You could win a $25 Amazongift card! 🙂 I made these goodies on the day that many people in my family began throwing up! There were not many of us who could test these, but that just meant more for us; right? 😉 They’re not exactly like traditional Snickerdoodles, but they hit the craving, for me. Try them and tell me what you think! Coconut Flour Snickerdoodles INGREDIENTS: 4 eggs 3/4 c honey 1 tsp vanilla extract 1/4 tsp sea salt 1/2 c butter,…
