Coconut Flour “Corn” Bread
Ok, so this isn’t really CORN bread, because that wouldn’t be GAPS legal. But if you want a bread to use in place of corn bread, that’s the consistency of corn bread, this is what you should make! It’s yummy with chili, or stew, or just by itself. Whip up some honey butter to serve it with, if you like! Ingredients: 6 eggs 1/2 c butter or ghee 1/4 c honey 1/2 tsp sea salt 1 tsp baking soda 3/4 c coconut flour Method: Preheat oven to 350° F. Grease a pie plate with butter. Winter Guacamole Recipe
Ok, so it’s not quite winter yet, but it feels like it, right? At least in northern Oregon it does! The mornings are frosty and oh-so-cold, and there have been several days where it was crazy windy outside. Whatever the weather is, here’s the dilema: avocados are in season and readily available in stores, but tomatoes and cilantro (the other great guacamole pieces) are not. What do you do if you want to make a really good guacamole this time of year? My guacamole cravings lead me to invent this simple recipe. Bacon Wrapped Apple Slices
Bacon Wrapped Apple Slices (GAPS Full Diet) Ingredients: One apple per person 1 package of bacon (make sure it is a GAPS legal package that has no sugar or chemical preservatives) 1 pkg. Toothpicks, optional Directions: Cook bacon according to directions and allow to cool. Meanwhile cut apples into slices. Wrap one slice (or 1/2 a slice to make the treat go further!) cooled bacon around each apple slice. Poke a toothpick through the end of the bacon all the way through to hold it in place.

Cranberry Apple Grain Free Granola
Every Wednesday before homeschool co-op, we have a big breakfast (the kids have a snack-time there, but I want to make sure they're well-fed because they can't just munch whenever they're hungry. Before I get in the shower, I pop 2 boxes of Applegate Farms chicken & apple sausages in the oven (YUM. I could eat an entire box of these alone). Lately, I've also been mixing up 8 eggs with a little yogurt, cheese & spices and pouring them in a buttered 8x8 pan, and putting those in the oven too.
