Cranberry Apple Grain Free Granola

Every Wednesday before homeschool co-op, we have a big breakfast (the kids have a snack-time there, but I want to make sure they’re well-fed because they can’t just munch whenever they’re hungry. Before I get in the shower, I pop 2 boxes of Applegate Farms chicken & apple sausages in the oven (YUM. I could eat an entire box of these alone). Lately, I’ve also been mixing up 8 eggs with a little yogurt, cheese & spices and pouring them in a buttered 8×8 pan, and putting those in the oven too.

Our other Wednesday morning staple is this Grain Free Granola on top of yogurt. I found the original version at Grain-Free Foodies, but I make it a little differently now. Nobody goes hungry in this house on Wednesday mornings! 🙂

Every other week, I soak my seeds overnight. I soak them in water with a little whey or sea salt (whey makes seeds a little sweet, I think, and I enjoy them this way!). The next day, I dehydrate trays of seeds ALL DAY in the oven. Someday I will own an Excalibur, but for now we use a whole bunch of electricity with our big oven. 🙂

I pour my dehydrated seeds into glass gallon size jars, which I store in my kitchen hutch (I have lots of jars of different foods). Then, once per week (usually the opposite week of the seed-soaking week), I make Grain Free Granola and maybe some seed crackers or granola bars. I store my granola in another glass jar. 🙂 On co-op mornings, we use 1/2 of the jar of granola (this is a double recipe from the original, but I like making it once every 2 weeks rather than every week! It lasts!).

 

Cranberry Apple Grain Free Granola

Ingredients

  • 2 cups pumpkin seeds (pre-soaked and dehydrated)
  • 2 cups sunflower seeds (pre-soaked and dehydrated)
  • 2 cups shredded, unsweetened coconut, divided
  • 1 cup raw honey, warmed
  • 1/2 tsp sea salt
  • 4 tsp cinnamon
  • 1 TBSP vanilla
  • 1 cup dried apples (no sugar), cut up into small bits (don't leave these big--they'll be choking hazards!)
  • 1 cup dried cranberries (no sugar)

Method

  1. Warm up the honey in a saucepan. Line a 9x13 pan with unbleached parchment paper. Set aside the dried apples and cranberries and 1 cup of shredded coconut. Toss everything else together in the prepared 9x13 pan. Drizzle the honey over the entire mixture and mix.
  2. Bake at 350 degrees for 30 minutes, stirring the mixture every 10 minutes.
  3. Stir in the remaining shredded coconut and dried fruit. Keep stirring up/breaking apart every 10 minutes or so until the mixture is completely dry.
  4. Store in a large glass jar with a lid. If it starts sticking together, just give it a good shake. 🙂
  5. If you find that the chunks are too big for your little ones, you could always put the dry ingredients into the food processor (before baking) for just a second (not long enough make seed flour :)).
  6. Make some homemade yogurt and serve some of this on top of it!
  7. Or, if you're not on GAPS or if you're willing to "cheat" on GAPS and use raw milk (as opposed to just yogurt), this is amazing with milk, too. It's like cereal--and for people who don't eat grains and never buy packaged cereals, that's a pretty nice treat. 🙂

Yum! We’ve been making a version similar to this and we love it! I also came across a recipe this morning called “apple snap granola” on Nourished and Nurtured It looks yummy too!

Hi Brenda!

I stumbled over here from The Nourished Gourmet and am so inspired by your blog! I just started learning about this way of life this Fall and with a 10 month old growing up so fast I am stead-fastly trying to change our way of life to the most wholesome and healthy! I will definitely be sticking around your blog. I like how you mention you weekly plans and schedules as far as soaking grains/nuts. Any more posts on this type of planning would definitely benefit me right now. I will do some searching! 🙂

Where do you find the dried cranberries without any added sugar? I have been looking for at least a month and can not find any.

I was pretty sure that raw milk is not a “cheat” if you’re on full GAPS. Because it is raw, the enzymes are present to help digest the lactose (which is a disaccharide, so by itself is of course not GAPS legal).
