GAPS Dinner: Parmesan Drumsticks

Do you miss fried chicken? Try this yummy recipe! It’s simple to prepare, and inexpensive as well. I often make some kind of drumstick recipe for long road trips, and we eat the chicken cold in the car. Bookmark this recipe for your summer picnics! Or eat it in the cold of winter! INGREDIENTS:

butter or coconut oil for greasing the pan

2 eggs

2 c grated parmesan cheese

1 tsp sea salt

1 tsp black pepper

12 to 18 chicken drumsticks

 

METHOD:

Preheat oven to 400°F. Grease a 9×13 baking pan and set aside. Crack eggs into a shallow bowl and beat.

Combine cheese, salt and pepper in another shallow dish. Place the chicken on the left of the work station

line, next the bowl of eggs next, next the bowl with the cheese mixture, and then the prepared baking dish.

Dip the drumsticks into the eggs, coat evenly. Then roll chicken in the cheese mixture, coat evenly. Place

chicken in baking pan. Repeat this process with each drumstick. Bake for 45 minutes, or until golden

brown.

 

Serves 4 to 6

  1. My kids love drumsticks, so I love finding new ideas. I loved how crispy the cheese coating turned out. They even reheated great the next day in the oven at 350 for about 15 minutes.
