Grilled Pork Chops with Mushroom Sauce

Ingredients

  • 6 pork chops, 1 inch thick
  • 1 1/2 tsp ground thyme
  • 1 1/2 tsp ground rosemary
  • 1 1/2 tsp sea salt
  • 1 1/2 tsp pepper
  • 1 tsp garlic powder

Method

  1. Combine all of the herbs & spices in a small bowl.
  2. Rub this mixture into the pork chops and set out at room temperature for 30 min.
  3. Cook the pork chops on a barbecue grill until they are golden on the outside and no longer pink inside.
  4. Alternatively, you can also pan-fry them in a skillet, in 1/4 cup butter.

Mushroom Gravy

Mushroom Gravy

Ingredients

  • 2 lb mushrooms
  • 4 TB butter
  • 4 garlic cloves, minced
  • salt & pepper
  • 1/2 c white wine
  • 1 can coconut milk

Method

  1. Cook the butter in a cast iron skillet over medium heat until melted.
  2. Add in the mushrooms and garlic.
  3. Sauté until the mushrooms begin to wilt.
  4. Sprinkle with salt & pepper, add in the wine.
  5. Add in the coconut milk and simmer until the sauce is reduced and a little thicker.
  6. Serve on top of grilled pork chops.
