I mentioned to you all how much I LOVE Delicata squash. YUM. That is what inspired me to make this lovely dish! I highly recommend making this the day after Thanskgiving with your leftover turkey! Anyways, let’s get on with the recipe!
Leftover Turkey with Delicata Squash
2 Delicata squash
1 sm sweet onion, diced
3 cleftover turkey or chicken
3 med apples, chopped
1 c fresh cranberries
2 tsp cinnamon
1 tsp sea salt
1/2 tsp nutmeg
1/2 c butter or ghee, plus extra for greasing the pan (where to buy ghee)
Preheat oven to 350 degrees. Grease a large baking dish with butter or ghee. Cut squash in half and scoop out the seeds. Slice into half rings and place in a large bowl. Toss with apples, cranberries and spices. Pour into prepared baking dish and dot with butter or ghee. Bake for 45 minutes to an hour, or until squash and apples are tender.
