Make it Your Way Crustless (gluten free) Quiche

Quiche is one way that I make less eggs feed my family. I don’t usually use a recipe when I make quiche–I use what I have on hand and just mix it up. It’s really hard to mess this up. I’m calling this Make it Your Way Quiche, because you can really make it however you want!

4 to 7 eggs

1/3 cup to 2 cups of something wet (yogurt, homemade mayo, cream cheese, milk, cream, sour cream, coconut milk, cottage cheese, melted butter (slightly cooled))

1 to 3 cups meat (cooked)

1 to 7 cups veggies (sauteed/softened)

1 to 3 cups cheese

1/4 to 1 tsp salt

1/8 to 1/2 tsp pepper

1/2 to 2 tsp other spices 

butter, coconut oil or bacon grease for greasing the pan

 

Combine the wet ingredients (eggs, yogurt/cream/whatever and spices). Grease a pie plate & put the veggies/meat/cheese in the pan. Pour the eggs over the veggies/meat/cheese.  Bake at 350 for 30 to 45 min.

If you’re using more meat, use less veggies, etc. You can create an all meat quiche, or an all veggie quiche, etc.

If you use 7 eggs plus 3 cups of yogurt/cream/whatever, you should really put this in a larger baking pan, and bake it for 45 to 60 min.

 

Meat Ideas:

You can use any leftover meat you have. Chicken, turkey, beef, ham, fish, shrimp, crab, lamb, proscuitto, bacon, sausage. Try leftover taco meat and make a taco quiche.

 

Veggie Ideas:

Spinach, mushrooms, red peppers, green peppers, onions, a little minced garlic, zucchini, other squash, tomatoes, artichokes, etc. Try caramelizing your onions. Try salsa for part of the veggies in your taco quiche. 🙂 

Cheese Ideas:

Cheddar, Pepper Jack, Feta, Goat Cheese, Extra Sharp Cheddar, Havarti, Swiss, Provolone, Monterey Jack, Gouda, Parmesan, Asiago

 

Spice Ideas:

Garlic, mustard powder, onion powder, cayenne (a little), oregano, thyme, nutmeg, taco seasoning, curry seasoning.

    I read one of your post on your other blog about the reason we are on Gaps, really we feel so much better with this diet, It’s not always easy but worth the effort !
