Grain-Free Meatballs

  • 2 lbs ground beef
  • 1/4 c coconut flour
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried ground rosemary
  • 1 tsp fennel seeds
  • 2 tsp sea salt
  • 1/4 c tomato paste
  • 32 oz chicken broth (homemade is best)
  • 1 medium onions, coarsely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp sea salt
  • 1 tsp dried thyme
  1. Preheat oven to 375°F. Combine beef, coconut flour, garlic power, oregano, basil, rosemary, fennel seeds, salt and tomato paste. Mix by hand and roll into 1 to 2 inch size balls. Bake for 25 minutes.
  3. In a sauce pan, bring broth, onions and garlic to a boil, then reduce heat and let broth simmer for 30 minutes, allowing onions to become tender. Pour broth into food processor and blend until smooth. Pour back into pan to reheat and season with salt and thyme.

One of my kids is really sensitive to tomato products – any suggestions on a replacement for the tomato paste?
