Pot Roast Stew {Grain Free, GAPS Legal}

It’s been cold here lately! I don’t know about you, but I crave a nice, warm beef soup or stew on cold days. There’s something about beef that comforts the body (at least mine!) more than any other type of meat. Anyways, this stew is sure to satisfy your taste buds this time of year! This recipe works for the GAPS Intro, Stage 4. Enjoy!

Pot Roast Stew

Ingredients

  • 4 lbs beef chuck roast
  • 2 onions, chopped
  • 4 quarts beef broth
  • 2 TB dried parsley
  • 3 tsp dried thyme
  • sea salt and black pepper
  • 1 teaspoon ground cloves
  • 6 carrots, cut into 2 inch lengths
  • 2 large turnips, cut into large cubes
  • 2 celery stalks, cut into 2 inch lengths

Method

  1. Preheat oven to 300 degrees.
  2. Place the pot roast, onions and broth in a large dutch oven.
  3. Sprinkle herbs and spices on top.
  4. Cook for about 2 hours, with the lid on.
  5. Add in the carrots, turnips and celery and cook for 1 more hour.
  6. Shred up the beef and serve in bowls like a stew.

    This is pretty close to what we made last night. 🙂
    I am a month in on GAPS with a very accelerated intro due to still nursing.
    I fear though I have become “that” person with some of my friends, and want to tell them all about it, and I think I’m getting annoying. Any tips on how to shut your mouth when you feel so much better?

      Why keep quiet if you think you’ve found something that makes you feel so much better and could potentially help others feel better too? 😉 Just be mindful about the tone you use and your attitude. Are you genuinely trying to help someone? Then go for it!
