This is a hearty main dish salad that is easy to prepare and yummy!
Shrimp Artichoke Salad
Ingredients:
2 lbs cooked shrimp, tails off
2 6.5 oz jars artichoke hearts, drained (check ingredients)
1/2 c red onion, chopped
4 TB fresh basil, chopped
1/4 c grated parmesan cheese
2 c salad greens, per person
Dressing:
1/4 c red wine vinegar
1 tsp garlic powder
1 tsp dried oregano
1/4 c grated parmesan cheese
1/2 c extra virgin olive oil
Method:
If shrimp is frozen, heat in a cast iron skillet until thawed and warm. In a large bowl, toss together shrimp, artichokes, red onion and basil. In a small bowl, combine all of the dressing ingredients. Pour the dressing ingredients into the bowl with the shrimp mixture and toss. Add 1/4 cup more grated parmesan and toss to combine. Wash, dry and rip about 2 cups of salad greens per person and place on plates. Top with a large scoop or 2 of the shrimp mixture & serve.

Anything that involves frozen shrimp usually makes for a quick and easy meal, and this is no exception. Another perk is that this is super healthy, too! We’ll have to test this simple recipe out soon.
Shrimp and artichokes are one of my favorite combos! This salad looks really wonderful. 🙂
